I'm guessing it comes loose when it "flips up"? Or what exactly happens when it "flips up"?
Have you checked for wear on the rachet teeth?

Wow, I know exactly what you're talking about, but it's gonna be so hard to explain with words.
Alright, let's take the right binding for instance for the sake of this discussion.
OK, so, on your lower right strap, you have a pad coming across from the left side of the binding, and the teeth and locky-clampy thing coming from the right side, correct? When you feed the right side into the left and then go to lock it down, make sure that the plastic "hinge" part from the right side goes on top of the pad from the left side, and not vice versa. Most likely, you are hastily clamping down the binding strap, and the pad is going over the hingey part, which makes it pop up. I guarantee you this is the problem. (Well, almost ;) )
This was hard to explain, so go look at your binding, play around with it (a boot has to be in it for it to happen), and if you need a better explanation, PM me and I'll take some pictures to show you what I'm talking about and email them to you.
